Crispy Tofu with Black Pepper Sauce.
Ingredients:
*2 tablespoon of reduced sodium soy sauce.
* 2tablespoon chili garlic sauce
*1 tablespoon of packed brown sugar
* 1 tablespoon of rice vinegar
*4 green onions
* 8 ounces of extra - firm tofu drained
*3 tablespoons of corn starch
* 6 tablespoons of canola olive oil
* 8 ounces of fresh sugar snap peas (thinly sliced)
* 1 teaspoon of freshly ground pepper
*3 garlic cloved -minced
*2 teaspoons grated fresh gingerroot.
Method
*Mince white parts of green onions; thinly sliced parts
*Cut tofu into 1/2 inch cubes; pat dry with paper towel. Toss tofu with cornstarch. In a large skillet, heat 4 tablespoon of medium-high heat. Add tofu; cook until golden crisp brown. 5-7 minutes. Stirring occasionally. Remove from pan; drain on paper towels.
*In the same pan , heat i tablespoon oil over medium- high heat. Add peas; stir-fry until crisp-tender, 2-3 minutes. Remove from pan.
*In the same pan, heat one tablespoon olive oil over medium-high heat. Add pepper; cook 30 seconds. Add garlic , ginger and minced green onions; stir-fry 30-35 seconds. Stir in soy sauce mixture; cook until slightly thickened. Remove from heat; stir in tofu and peas. Sprinkle with sliced green onions.
