Vegan Split Peas Soup
*2 cups of dried split peas sorted and rinsed
* 6 cups of vegetable broth
* 1 small onion (chopped)
* 2 green onions (chopped)
* 4 cloves garlic (minced)
* 2 medium carrots (diced)
* 2 ribs of celery (chopped)
*1 medium potato (chopped)
* 1 bay leaf
* 1 teaspoon smoked paprika
* 1 teaspoon dried basil leaves
* 2 sprigs of fresh thyme
* 2 tablespoon nutritional yeast flakes
* 1 tofu pups hot dogs (cut into coins)
* 1/4 teaspoon cayenne pepper
* add salt.
Directions:
1. Add all the ingredients into the Instant Pot
2. Cover Instant Pot and set the pressure released valve to Sealing
3. Select the Pressure Cook or Manual setting and set the cook time for 15 minutes at high pressure.
4. Let the pressure release naturally for 20 minutes..
5. Move the pressure releasing to "Venting" to release any remaining steam.
Open the pot stir and serve!
